The mighty lamington, a sponge cake coated in chocolate icing and rolled in coconut, was said to have been invented as a way of using stale cake. One story has it that the lamington was named after the wife of Lord Lamington, governor of Queensland in the late 1800's. Apparently Lady Lamington disliked throwing out her stale cakes, and thought up an innovative way to reuse them...
